Pizza Dough

Thin Thick Sauce

Pizza dough comes in a few varieties. You may want thin crust, thick crust, pan crust, you may want the easy no yeast kind or the type that needs to rise. We’ve put together some simple recipes for five different varieties. Start simple but don’t be afraid to gamble later on when you’ve got a handle on the basic formula.

THIN CRUST – NO YEAST

Ingredients:

2 cups all-purpose flour 2/3 cup milk 2 tsp. baking powder 6 tbsp. olive oil 1/2 tsp. salt

STEPS:

Preheat oven to 425°F.

In a large bowl, combine all ingredients and stir well with a fork until the dough begins to form a ball and pull away from sides of bowl.

Knead dough by hand, while still in bowl, until smooth; then form a ball.

Press dough into an oiled baking sheet or pizza pan using your fingertips, leaving a thicker edge to hold fillings in.

Sprinkle with favorite toppings (sauce flavored with garlic, basil and oregano, mozzarella and Parmesan cheese, mushrooms, anchovies, black olives, onions, peppers, etc.).

Bake for about 30 minutes or until cheese is bubbly and edges are golden brown.

THIN CRUST – YEAST

Ingredients:

2 pkg. rapid rise yeast 4 c. flour 2/3 c. warm water 1 tbsp. sugar 1 tsp. sugar 3 tbsp. olive oil 1 tsp. salt 2/3 c. warm water

STEPS:

Preheat oven to 350°F.

In a small bowl, mix yeast, water and sugar. Water should be warmer than room temperature but not so hot you can’t put your hands in it (105°F to 115°F). Too hot and you kill the yeast, too cold and it can’t grow. Let stand for 5 minutes until foamy.

(Optional: 1/2 tsp Italian seasoning I like to work herbs into the dough)

Make a ball of the dough and place it on a floured surface. Pour portions of the yeast mixture into the dough and kneed together yeast and flour mixture until you add all the yeast mixture and the dough becomes elastic (stretchy).

Place dough into an oiled bowl coat thoroughly with oil. Cover and let rise until it doubles in size (about an hour).

Dust your pizza pan with flour or cornmeal. Easy route spray the pan with a cooking spray.

Brush with olive oil and spread with your favorite toppings (pizza sauce, mozzarella and Parmesan cheese, pepperoni, mushrooms, peppers and onions are a few suggestions).

Bake at 350°F-400°F for 15-20 minutes or until edges are golden and lightly browned in spots and cheese is melted and bubbly.

Thick Crust Pizza Dough

Ingredients:

5 cups all-purpose flour

2 tablespoons yeast (2 packets)

4 tablespoons sugar

2 teaspoons salt

2 cups warm water (110-120 degrees F)

4 tablespoons oil

STEPS:

Preheat oven to 425 degrees F.

Mix together all the dry ingredients. Add the warm water and oil, mix well. Knead dough a few times

on a lightly floured surface. Put dough back in bowl, and lightly coat dough with oil. Cover and let rest or 5 minutes. While dough is resting, mix together all ingredients for the pizza sauce.

Divide dough in half, and press each half into an oiled pizza pan.

Cook dough for 2 minutes, then take out and let cool. Put sauce then desired toppings on pizza. Cook for 18-20 minutes or until crust is lightly browned and cheese is melted.

Pizza Sauce

Ingredients:

15 ounces tomato sauce 2 teaspoons oregano

2 tablespoons garlic powder 1/4 teaspoon paprika

4 teaspoons sugar 1 teaspoon thyme

Directions:

Put all the ingredients into a sauce pan and simmer over a low heat until the sauce starts to bubble.

Let it simmer until the sauce is the thickness of a jam.
